Beer Battered Onion Rings

2 x Vidalia onions, or other sweet onion
1 cup beer
1 cup flour
1 tbsp paprika
2 tsp salt
2 cups peanut oil for frying
In a medium-size pot, heat oil to 350*F.

Slice onions in 1/4-inch slices and separate rings.

In a medium bowl, mix beer, flour, paprika and salt into a batter.

Dip onion rings in batter until thoroughly coated, then fry in small batches for
approximately 2 minutes, or until golden. Turn once during frying. Remove and dredge on a paper towel. Serve immediately.  Serves 4.
